Mountain tea, or tsai tou vounou, is the tea most Greek families keep in the cupboard. It's made from Sideritis raeseri, a hardy plant that grows wild on Greek mountainsides. Ours comes from the Parnonas mountains and is handpicked as whole stems, leaves and flowers. The Great Taste judges found it "slightly sweet with a long finish" and "pleasing floral, herbal notes". It's naturally caffeine-free, so it works any time of day.
How to use
Break a sprig (or use about one tablespoon) into a cup or small pot. Pour over just-boiled water and let it steep for 5 to 7 minutes. For a stronger brew, simmer it gently for a few minutes the way Greek grandmothers do. It's lovely as it is, or with a spoon of thyme honey and a slice of lemon. Chill leftovers for an iced tea in summer.
